On the left are the two reference shots I used for the portrait of Cookie. Here's an example of what happens when you take pictures of a black and white horse in bright sunlight. He looks pretty washed out. He is also standing with his hind legs too far forward, so I moved a hind leg back in the portrait.

The owner also really liked this head shot with his mane blowing in the wind a little. She liked his head turned as if he's looking at the viewer. So I combined these two poses into the final result:
